Mango and pistachio Bircher muesli

Ingredients

  • 2 cups (180g) rolled oats
  • 1 cup (250ml) pineapple juice
  • 1 cup (280g) mango-flavoured yoghurt
  • 1 tsp ground cinnamon
  • 1 mango, stoned, peeled, finely chopped
  • 1/4 cup (45g) pistachios, toasted, thinly sliced

Method

  1. Step 1

    Combine the oats, pineapple juice, yoghurt and cinnamon in a large bowl. Cover with plastic wrap and place in the fridge overnight to soak.

    Add mango and half the pistachios to the muesli mixture and stir to combine. Divide among serving bowls. Top with the remaining pistachios.
