Mango, coconut and mint popsicles

Ingredients

  • 2 mangoes, peeled, flesh chopped
  • ¾ cup (185ml) coconut cream
  • ¼ cup finely chopped mint
  • 1½ tbs lime juice
  • 1½ tbs brown sugar

Method

  1. Step 1

    Place the mango, coconut cream, mint, lime juice and sugar in a blender and blend until smooth.
  2. Step 2

    Divide mango mixture among six ½-cup (125ml) ice-block moulds. Place in the freezer overnight or until firm.
