Heat a large non-stick frying pan over medium-high heat. Add the bacon and cook, turning, for 5 mins or until golden. Drizzle with maple syrup and cook, turning to coat, for 2 mins or until bacon caramelises. Transfer to a plate.
Wipe the pan clean with paper towel and return to medium heat. Add the oil. Crack eggs into the pan and cook for 2-3 mins for a runny egg yolk† or until cooked to your liking. Season.
Meanwhile, heat a grill on medium. Arrange bun tops and bases, cut-sides up, on a baking tray. Top bun bases with cheddar. Cook under the grill for 1-2 mins or until cheddar melts.
Spread the bun tops with mayonnaise. Divide the bun bases among serving plates. Top with maple bacon, rocket and eggs and sprinkle with paprika. Top with bun tops and serve immediately.
