Ingredients

  • 250g butter, softened
  • 1 cup (220g) caster sugar
  • 4 Coles Australian Free Range Eggs
  • 2 tsp vanilla extract
  • 2 2/3 cups (400g) self-raising flour
  • 1/2 cup (125ml) milk
  • 2 apples, cored, peeled, thinly sliced
  • Cinnamon sugar, to sprinkle
  • Custard, to serve

Method

  1. Step 1

    Preheat oven to 180°C. Grease a 20cm (base measurement) round cake pan and line the base and side with baking paper. Use an electric mixer to beat the butter and sugar in a bowl until pale and creamy. Add eggs, 1 at a time, beating well after each addition. Stir in the vanilla. Add flour and milk, in 2 batches, and stir to combine.
  2. Step 2

    Pour half the mixture into the prepared pan. Arrange half the apple over the top. Repeat with the remaining mixture and apple. Sprinkle with cinnamon sugar.
  3. Step 3

    Bake for 1 hour 10 mins or until the top is golden and springy to the touch. Set aside in the pan for 10 mins before turning onto a wire rack to cool completely.
  4. Step 4

    Transfer the cake to a serving platter. Cut into wedges and serve with the custard.
