Maria’s rocky road bundt

Ingredients

  • 1.2kg milk chocolate, chopped
  • 400g dry-roasted cashews
  • 2 x 190g pkts raspberry lollies
  • 520g pkt pink and white marshmallows

Method

  1. Step 1

    Grease a 10-cup (2.5L) bundt or fluted ring pan. Place the chocolate in a large heatproof bowl over a saucepan of simmering water (don’t let the bowl touch the water). Stir with a metal spoon for 8-10 mins or until chocolate melts and is smooth. Remove from heat.

  2. Step 2

    Add the cashews and lollies and gently stir to combine. Working quickly, add the marshmallows and gently fold to combine.

  3. Step 3

    Spoon the chocolate mixture into the prepared pan. Use the back of the spoon to press into the mould. Cover with foil or plastic wrap and place in the fridge for 1 hour or until completely set. Turn onto a chopping board, tapping the base of the pan to release the rocky road. Use a large sharp knife to cut into wedges to serve.
