Ingredients

  • 2 Coles RSPCA Approved Australian Chicken Breast Fillets, halved horizontally
  • 1/2 cup (75g) chopped drained sun-dried tomatoes, 1 1/2 tbs oil reserved
  • 1 red onion, thinly sliced
  • 4 garlic cloves, crushed
  • 1/4 tsp paprika
  • 1 cup (250ml) vegetable stock
  • 1/3 cup (80ml) thickened cream
  • 200g Perino tomatoes, halved
  • 1/3 cup coarsely chopped basil, plus extra to serve
  • Steamed rice, to serve
  • Steamed green vegetables, to serve

Method

  1. Step 1

    Season chicken all over. Heat 2 tsp of the reserved sundried tomato oil in a large frying pan over medium-high heat. Add half the chicken and cook for 2-3 mins each side or until the chicken is golden brown and just cooked through. Transfer to a plate. Repeat with remaining chicken.

  2. Step 2

    Add remaining 2 tsp of oil to the same pan. Cook onion, stirring, for 5 mins or until soft. Add the sundried tomatoes, garlic and paprika and stir to combine. Add the stock and cream and bring to the boil. Reduce heat to low and simmer for 5 mins or until sauce thickens slightly. Add the tomatoes and basil.

  3. Step 3

    Return the chicken to the pan. Bring to a simmer. Cook for 2-3 mins or until the sauce thickens slightly. Season. Remove from heat. Sprinkle with the extra basil. Serve with rice and steamed green vegetables.
