2 whole star anise
1 tbs fennel seeds
2 dried bay leaves
2 tsp ground cloves
11/2 tbs ground cinnamon
1 tbs ground ginger
11/2 tbs ground cardamom
1/2 tsp ground black pepper
Black tea bags, to serve
Milk, to serve (optional)

Process the star anise, fennel seeds and bay leaves in a food processor or spice grinder until finely crushed. Layer the ground cloves, cinnamon, ginger, the crushed fennel seed mixture, cardamom and black pepper in a sealable jar.
To serve, shake or stir the masala chai mix to combine. Add 2 tsp of the masala chai mix to 200ml boiling water with 1 black tea bag. Set aside for 5 mins to infuse. Strain into a mug and discard solids. Add a dash of milk, if using, to serve.
