Meatball minestrone

Ingredients

  • 1 tbs olive oil
  • 560g pkt Coles Classic Pork & Beef Meatballs
  • 500g pkt Coles Minestrone Kit
  • 400g can diced tomatoes
  • 1/3 cup (25g) finely grated parmesan

Method

  1. Step 1

    Heat oil in a large saucepan over high heat. Add meatballs and cook, turning, for 5 mins or until brown all over. Transfer to a plate.
  2. Step 2

    Add the vegetables from the soup kit to the pan. Cook, stirring, for 5 mins or until vegetables are just tender. Add stock sachet from the soup kit, tomato and 4 cups (1L) water. Bring to the boil. Reduce heat to low. Return meatballs to the pan. Bring to a simmer. Cook for 10 mins or until the meatballs are cooked through and vegetables are tender.
  3. Step 3

    Divide soup among serving bowls and sprinkle with parmesan.
