Mediterranean barbecued lamb chops

Ingredients

  • ¼ cup Mediterranean-style herb paste
  • 1 tbs olive oil
  • 12 Coles Australian Lamb Loin Chops
  • 400g Coles Bakery Turkish Bread, cut into 3cm slices
  • 2 x 300g Coles Australian Mediterranean Style Salad bowls
  • ⅓ cup (80ml) balsamic dressing
  • 60g fetta, crumbled
  • Lemon wedges, to serve

Method

  1. Step 1

    Combine the herb paste and oil in a small bowl. Heat a barbecue or chargrill plate on medium-high heat. Cook the lamb, brushing with the oil mixture, for 3 mins each side or until cooked to your liking. Transfer to a plate. Cover with foil and set aside for 5 mins to rest.
  2. Step 2

    Meanwhile, cook the bread on the same barbecue or chargrill plate, turning, for 3 mins or until browned all over.
  3. Step 3

    Toss the salad contents with the balsamic dressing. Divide the salad mixture, lamb and bread among serving plates. Sprinkle with fetta. Serve with lemon wedges.
