Try these flavour packed Mediterranean beef wraps, topped with Tabbouleh, sweet potato and hommus!

Mediterranean-style beef wraps


  • 500g pkt Coles Sweet Potato Chips
  • 1 tbs olive oil
  • 500g Coles Australian Beef Mince
  • 1 small brown onion, finely chopped
  • 1 garlic clove, crushed
  • 1 tbs finely chopped mint leaves
  • 70g fetta, crumbled
  • 4 white soft wraps
  • 200g hommus dip
  • 60g pkt Coles Australian Baby Spinach
  • 2 cups Coles Deli Quinoa & Tabouleh Salad
  • Greek-style yoghurt, to serve

  1. Step 1

    Preheat oven to 180°C. Line a large baking tray with baking paper. Place the sweet potato chips and oil in a large bowl. Toss until well combined. Arrange the sweet potato mixture in single layer on the lined tray. Bake, turning once halfway through cooking, for 35 mins or until tender and heated through.

  2. Step 2

    Meanwhile, place the beef, onion, garlic, mint and fetta in a large bowl. Stir until well combined. Divide the mince mixture into 8 even portions. Shape each portion into a sausage shape. Preheat a greased barbecue grill or chargrill on medium heat. Spray the sausages with olive oil spray. Cook, turning occasionally, for 8-10 mins or until cooked through. Transfer to a plate. Cover with foil and set aside for 5 mins to rest.

  3. Step 3

    Divide the wraps among serving plates. Spread wraps evenly with hommus. Top with spinach, tabouleh salad, sausages and half the sweet potato chips. Season. Serve with yoghurt and remaining sweet potato chips.
