Ingredients

  • 1/2 x 450g pkt Coles Simply Garlic Bread
  • 375g Coles Simply penne pasta
  • 1/4 cup olive oil
  • 2 garlic cloves, crushed
  • 300g frozen Mediterranean vegetables
  • 2 tbs Coles Grated Parmesan cheese
  • 1 tsp dried chilli flakes (optional)

Method

  1. Step 1

    Preheat oven to 200°C. Cook garlic bread following packet directions.

  2. Step 2

    Meanwhile, cook the pasta in a large saucepan of boiling water following packet directions or until al dente. Drain, reserving 1/2 cup (125ml) cooking liquid.

  3. Step 3

    Heat the oil in a large frying pan over medium heat. Add garlic and vegetables and cook, stirring occasionally, for 5 mins or until vegetables are heated through and golden brown. Add pasta and reserved cooking liquid and toss to combine. Season.

  4. Step 4

    Divide pasta among bowls and sprinkle with parmesan and chilli, if using. Serve with garlic bread.
