Ingredients

  • 500g Coles RSPCA Approved Chicken Thigh Fillets (from the deli)
  • 420g Coles Chili Mexican Beans
  • 400g can Coles Simply Chopped Tomatoes
  • 1 1/2 cups (300g) long-grain white rice

Method

  1. Step 1

    Heat a large frying pan over high heat. Cook chicken, in 2 batches, for 3 mins or until golden brown.

  2. Step 2

    Add the beans and tomato and stir to combine. Bring to the boil. Reduce heat to medium-low and simmer for 10 mins or until chicken is cooked through.

  3. Step 3

    Meanwhile, cook rice following packet directions.

  4. Step 4

    Serve chicken mixture with rice.
