Mexican chicken bake

Ingredients

  • 3 cups shredded leftover roast chicken or turkey or roast meat
  • 400g can red kidney beans or any canned beans, rinsed, drained
  • 310g can corn kernels, drained
  • 375g jar enchilada sauce or canned tomatoes or passata
  • 1/2 baguette or bread of choice, sliced
  • 1/2 cup finely grated cheddar, pizza or mozzarella cheese
  • 1 tbs chopped coriander or parsley or basil

Method

  1. Step 1

    Preheat the oven to 190°C. 

  2. Step 2

    Place 3 cups of shredded roast chicken, turkey or roast meat in a large bowl and combine with kidney or canned beans.

  3. Step 3

    Add corn kernels and enchilada sauce, passata or canned tomatoes.

  4. Step 4

    Place the mixture into an ovenproof dish and top with baguette or bread slices, overlapping slightly. 

  5. Step 5

    Sprinkle with grated cheese and bake for 10 to 15 minutes or until the bread is crisp and golden.

  6. Step 6

    Sprinkle with one tbs of chopped coriander, parsley or basil and serve.
