Turn a plain chicken schnitty into flavour-fest with this Mexican chicken burgers with corn salsa and lime aioli recipe. A tasty new weeknight wonder has arrived.

Mexican chicken burgers with corn salsa and lime aioli

Ingredients

  • 310g can corn kernels, drained
  • 1 long red chilli, seeded, finely chopped
  • 1/2 red onion, finely chopped
  • 1 tbs finely chopped coriander
  • 1 1/2 tbs lime juice
  • Canola oil, to shallow-fry
  • 4 Coles RSPCA Approved Chicken Schnitzels (about 600g)
  • 1/2 cup (150g) whole-egg mayonnaise
  • 1 garlic clove, crushed
  • 4 Coles Bakery Kaiser Rolls, split
  • 1 avocado, stoned, peeled, mashed
  • 50g rocket leaves
  • Lime wedges, to serve

Method

  1. Step 1

    Place the corn, chilli, onion and coriander in a bowl. Add 2 tsp of the lime juice and toss to combine.
  2. Step 2

    Add enough oil to a large frying pan to cover the base. Heat over medium heat. Cook the schnitzels, in batches, for 4-5 minutes each side or until golden and cooked through. Transfer to a plate lined with paper towel. Cut in half crossways.
  3. Step 3

    Place the mayonnaise, garlic and remaining lime juice in a small bowl and stir to combine.
  4. Step 4

    To assemble the burgers, spread roll bases with avocado and roll tops with aioli. Top the bases with schnitzel, corn salsa, rocket and remaining aioli. Place the tops on top. Serve with lime wedges.
