Ingredients

  • 2 tsp smoked paprika
  • 2 tsp ground cumin
  • 2 tsp garlic powder
  • 1 tsp ground coriander
  • 1 tsp dried oregano
  • 2 tsp sea salt flakes
  • 1 tsp freshly ground black pepper
  • 1.8kg Coles Australian Pork Leg Roast Boneless
  • Coles Australian Superfood Leaf Blend, to serve

Method

  1. Step 1

    Preheat a covered barbecue on high. (Alternatively, preheat oven to 230°C.)
  2. Step 2

    Combine paprika, cumin, garlic powder, coriander, oregano and salt in a small bowl. Rub all over pork. Place pork in a disposable baking tray. Cook pork, using indirect heat, in a covered barbecue for 30 mins. Reduce heat to low or 160°C. Roast in covered barbecue using indirect heat, or in oven, for 1 hour 30 mins or until cooked through.
  3. Step 3

    Transfer pork to a plate and cover with foil. Set aside for 20 mins to rest. Serve with salad leaves.
