Ingredients

  • 2 tsp olive oil
  • 1 brown onion, finely chopped
  • 1 red capsicum, seeded, finely chopped
  • 2 garlic cloves, finely chopped
  • 500g Coles Australian No Added Hormones Beef Mince
  • 30g Mexican seasoning
  • 400g can diced tomatoes
  • 400g can black beans, rinsed, drained
  • 1/2 cup (60g) coarsely grated cheddar
  • 4 Coles Australian Free Range Eggs
  • 1 avocado, stoned, peeled, chopped
  • 1/2 cup coriander sprigs, chopped
  • Sour cream, to serve
  • Corn chips, to serve

Method

  1. Step 1

    Heat oil in a large deep frying pan over medium heat. Add onion, capsicum and garlic and cook, stirring, for 3 mins or until vegetables soften. Add mince and cook, stirring with a wooden spoon to break up lumps, for 3 mins or until the mince changes colour. Add the Mexican seasoning and stir until combined. Stir in the tomato. Reduce heat to medium-low and simmer for 6 mins or until mixture thickens. Stir in the beans. 

  2. Step 2

    Sprinkle mince mixture with cheese. Use a spoon to make 4 large indents in the mixture. Carefully crack 1 egg into each indent. Increase heat to medium. Cover and cook for 2 mins for runny yolks* or until cooked to your liking.

  3. Step 3

    Top mince mixture with avocado, coriander and sour cream. Season with pepper and serve with corn chips.
