Ingredients

  • 2 tsp ground cumin
  • 1 tsp grated lemon rind
  • 1 tbs olive oil
  • ½ tsp cracked black pepper
  • 500g Coles Australian Beef BBQ Round Steak
  • 200g pumpkin and harissa hommus
  • 4 large pita bread
  • 60g baby rocket leaves
  • 200g punnet Perino tomatoes, sliced
  • 1 Lebanese cucumber, seeded, sliced
  • 1 red onion, thinly sliced
  • ⅓ cup (95g) Greek yoghurt
  • ¼ cup mint leaves
  • Grated lemon rind, extra, to serve
  • Oven-baked chips, to serve

Method

  1. Step 1

    Combine cumin, lemon rind, oil and pepper in a large bowl. Season with salt. Add beef and turn to coat.
  2. Step 2

    Heat a chargrill or frying pan over medium-high heat. Cook for 2 mins each side or until cooked to your liking. Transfer to a heatproof plate. Cover and set aside for 5 mins to rest. Thinly slice.
  3. Step 3

    Spread the hommus over pita bread. Top with rocket, tomato, cucumber, onion, beef, yoghurt, mint leaves and extra lemon rind. Serve with chips.
