Middle Eastern-style lamb on Turkish bread

Ingredients

  • 1 red onion, thinly sliced
  • 2 tbs apple cider vinegar
  • 500g Coles Australian Lamb Mince
  • 2 red capsicums, seeded, chopped
  • 1 tbs harissa spice blend
  • 2 tbs tomato paste
  • 1/2 bunch mint, chopped
  • 400g Coles Turkish Pide, split horizontally
  • Mint sprigs, to serve
  • 1 cup (280g) plain Greek-style yoghurt
  • 120g pkt Coles Australian 4 Leaf Salad

Method

  1. Step 1

    Preheat oven to 200°C. Combine onion and vinegar in a medium bowl. Set aside for 5 mins to soften. Drain.

  2. Step 2

    Heat a greased large frying pan over medium-high heat. Cook mince, stirring with a wooden spoon to break up lumps, for 3-4 mins or until browned. Add the capsicum and spice blend. Cook, stirring, for 2 mins or until aromatic. Add tomato paste, half the chopped mint and 2 tbs water and stir to combine. Season.

  3. Step 3

    Place bread on a baking tray. Spray with olive oil spray. Bake for 8-10 mins or until crisp and heated through.

  4. Step 4

    Spoon the lamb mixture evenly over the bread. Top with pickled onion, remaining chopped mint and mint sprigs. Serve with the yoghurt and salad leaves.
