You can't go wrong with a steak. Especially when it's Middle Eastern T-bone steaks with jewelled rice. Yum!

Middle Eastern T-bone steaks with jewelled rice


  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 2 tbs olive oil
  • 4 x 260g Coles Australian Beef T-bone Steaks
  • 450g pkt Coles Long Grain White Rice
  • 2 tsp grated lemon rind
  • 2 tbs lemon juice
  • ¼ cup (35g) dried cranberries
  • ¼ cup (35g) chopped dried apricot
  • 2 tbs chopped pistachio kernels
  • 2 tbs chopped flat-leaf parsley
  • Lemon wedges, to serve

  1. Step 1

    Combine the cumin, coriander and 1 tbs of the oil in a small bowl. Season. Rub the spice mixture over steaks. Heat a barbecue grill or chargrill on medium-high. Cook the steaks for 3 mins each side for medium or until cooked to your liking. Transfer to a plate and cover with foil. Set aside for 5 mins to rest.

  2. Step 2

    Meanwhile, cook the rice in microwave following packet directions. Transfer to a large bowl. Add the lemon rind and juice and remaining oil. Toss to combine. Add cranberries, apricot, pistachio and parsley. Season.
  3. Step 3

    Serve steaks with rice and lemon wedges.
