  • 350g pkt Coles Original Pancake Mix
  • 1 banana, finely chopped
  • Blueberries, to serve
  • Sliced kiwifruit, to serve
  • Sliced banana, to serve
  • Sliced strawberries, to serve

  1. Step 1

    Prepare the pancake mix following packet directions. Add the chopped banana and shake to combine.
  2. Step 2

    Heat a large non-stick frying pan over medium heat. Spoon 1-tsp portions of pancake mixture around the pan, allowing room for spreading. Cook for 1 min each side or until cooked through. Repeat in batches with the remaining pancake mixture.
  3. Step 3

    Thread the blueberries onto bamboo skewers with the mini pancakes, kiwifruit, sliced banana and strawberry.
