Mini beef and tomato tarts

Ingredients

  • 2 tsp olive oil
  • 1 brown onion, finely chopped
  • 1 garlic clove, crushed
  • 250g Coles Australian 4 Star Beef Mince
  • 2 tsp plain flour
  • 2 tsp tomato paste
  • 3 tsp Worcestershire sauce
  • 1 tsp brown sugar
  • 2 x 50g tubs Gravox Traditional Gravy
  • 1 tbs finely chopped flat-leaf parsley
  • 3 sheets shortcrust pastry, just thawed
  • 24 cherry tomatoes

Method

  1. Step 1

    Heat oil in a medium saucepan over medium heat. Cook onion, stirring, for 5 mins or until softened. Add garlic and cook for 1 min. Add mince and cook, stirring with a wooden spoon to break up any lumps, for 5 mins or until cooked through.
  2. Step 2

    Add flour and cook, stirring, for 2 mins. Add tomato paste, Worcestershire sauce, sugar, gravy and 1/4 cup (60ml) water. Cook for 5 mins or until thickened. Transfer to a bowl and place in the fridge for 10 mins to chill.
  3. Step 3

    Preheat oven to 220°C. Lightly grease a 24-hole mini muffin pan. Use a 7cm pastry cutter to cut 24 discs from the pastry. Line holes with the pastry. Spoon mince mixture into the pastry cases. Top with tomatoes. Bake for 15 mins or until pastry is golden and crisp. Set aside in the pan for 10 mins to cool slightly. Serve warm.
