Who said pie makers where only made for making pies? Using bought brioche, you can easily whip up a batch of deliciously sweet and juicy Berry bread and butter puddings.

Ingredients

  • 400g brioche loaf
  • 40g butter, softened
  • 4 Coles Australian Free Range Eggs, lightly whisked
  • ½ cup (125ml) milk
  • ⅓ cup (75g) caster sugar
  • ⅔ cup (100g) frozen mixed berries
  • Icing sugar, to serve
  • Vanilla ice cream, to serve

Method

  1. Step 1

    Cut brioche into 2cm-thick slices. Spread 1 side of each slice with butter. Cut each slice into 3cm pieces.
  2. Step 2

    Whisk the egg, milk and sugar in a large shallow dish until combined. Add brioche and berries. Set aside for 10 mins to soak.
  3. Step 3

    Preheat pie maker. Spoon ¼ cup of the brioche mixture into each pie maker hole. Close the lid. Cook for 6 mins or until golden. Stand for 5 mins. Transfer to a plate. Repeat with the remaining brioche mixture to make 12 puddings.
  4. Step 4

    Dust puddings with icing sugar and serve with ice cream.
