Mini hot dog grazing platter

Ingredients

  • 1kg pkt Primo Cocktail Franks
  • 12 white dinner rolls
  • 300g pkt Primo Cabanossi, sliced
  • Twiggy sticks, to serve
  • Cheese cubes, to serve
  • Grated tasty cheddar, to serve
  • Thinly sliced red onion, to serve
  • White cocktail onions, to serve
  • Halved cherry tomatoes, to serve
  • Tomato sauce, to serve
  • American mustard, to serve

Honey-mustard mayo

  • 2/3 cup (200g) mayonnaise
  • 1 1/2 tbs honey
  • 2 tsp wholegrain mustard

Smashed avo

  • 1 large ripe avocado, chopped
  • 1 tbs lemon juice

Method

  1. Step 1

    Preheat oven to 220°C. Line a baking tray with baking paper.

  2. Step 2

    To make honey-mustard mayo, combine mayonnaise, honey and mustard in a bowl.

  3. Step 3

    To make smashed avo, use a fork to mash avocado and lemon juice in a bowl. Season.

  4. Step 4

    Place cocktail franks in a large saucepan and cover with water. Bring to the boil over high heat. Set aside for 5 mins or until heated through. Drain.

  5. Step 5

    Meanwhile, place rolls on lined tray. Bake for 3-5 mins or until heated through. Cool slightly. Split the rolls lengthways (don’t cut all the way through).

  6. Step 6

    Arrange rolls, cocktail franks, cabanossi, smashed avo and honey-mustard mayo on a serving platter. Serve with twiggy sticks, cheese cubes, grated cheddar, sliced onion, cocktail onions, tomato, tomato sauce and American mustard.
