Mini roast beef subs

Ingredients

  • 4 Coles Multigrain Dinner Rolls
  • 2 tbs gherkin relish
  • 4 slices Swiss cheese
  • 4 slices roast beef
  • 1/2 Lebanese cucumber, thinly sliced diagonally
  • 1/2 avocado, stoned, peeled, thinly sliced

Method

  1. Step 1

    Preheat oven to 220°C. Line a large baking tray with baking paper. Place the rolls on the lined tray and bake for 3 mins or until light golden. Set aside to cool completely.

  2. Step 2

    Use a serrated knife to split each roll lengthways (don’t cut all the way through). Spread relish evenly over the cut sides of rolls. Fill with cheese, beef, cucumber and avocado. Season.

  3. Step 3

    Cover with plastic wrap or baking paper secured with string. Store in the fridge for up to 2 days.

Use it up:
The dinner rolls come in a 6-pack. To use up the remaining two, enjoy with lunch or dinner, or blitz into breadcrumbs.
Freeze in a sealable bag for up to 3 months.
