Mix and match sandwich fillings

Ingredients

  • 6 slices wholemeal or multigrain bread

Chicken and hommus

  • Beetroot hommus, to serve
  • 2 slices roasted chicken breast (from the deli)
  • Coles Australian Baby Spinach & Rocket, to serve

Ham and salad

  • 1/4 avocado, stoned, peeled
  • 1/2 tsp lemon juice
  • 2 slices shaved ham (from the deli)
  • 1/2 roma tomato, thinly sliced
  • Carrot, shredded, to serve
  • Lebanese cucumber, peeled into ribbons, to serve

Curried egg and lettuce

  • 1 hard-boiled egg, peeled, coarsely mashed
  • 1 tbs mayonnaise
  • 1/2 tsp curry powder
  • Baby cos lettuce, shredded, to serve

Method

  1. Step 1

    To make the chicken and hommus sandwich, spread 1 slice of bread with hommus. Top with chicken and spinach and rocket. Top with another slice of bread.

  2. Step 2

    To make the ham and salad sandwich, combine the avocado and lemon juice in a small bowl. Season. Spread 1 slice of bread with avocado mixture and top with ham, tomato, cucumber and carrot. Top with another slice of bread.

  3. Step 3

    To make the curried egg sandwich, combine the egg with the mayonnaise and curry powder in a bowl. Season. Spread 1 slice of bread with the egg mixture. Top with lettuce and remaining slice of bread.

Three types of sandwiches in one recipe? Yes, please. Take your pick from chicken and hommus, ham and salad, or curried egg sandwiches. And because each sandwich filling is different, there'll be something for everyone – perfect for feeding a crowd. These sandwich fillings are easy to make, yet packed with flavour and vibrant in colour. You can even turn them into jaffles or toasties for a work lunch or snack that will be the envy of all.

Making the hommus and chicken sandwich

Here is how to make the best chicken sandwich filling:

  • You can use roasted chicken breast from the deli, any leftover cooked chicken or Coles hot roast chicken from the night before (that has been properly stored in the fridge). Ensure the chicken is cooled down before putting it in the sandwich, to avoid soggy bread.

  • Spread the hommus on one slice of bread. The hummus layer helps to prevent the ‘wetter’ sandwich ingredients from getting the bread soggy. 

  • In this chicken sandwich filling recipe, we use spinach and rocket, but for extra crunch you can add lettuce as well. 

Making the salad and ham sandwich

Follow these tips for the ultimate ham salad sandwich:

  • Condiments that will work well include honey mustard, mayonnaise, BBQ sauce, tomato chutney, relish or chimichurri.

  • To prevent soggy bread, spread one slice of bread with the mashed avocado, and the other slice with butter or mustard. The spreads act as a barrier between the ‘wetter’ ingredients and the bread.

  • Sprinkle a little salt on the sliced tomatoes and set aside. The salt draws water out of the tomatoes. Less moisture means no soggy sandwich! 

  • Try to stick to just three types of veggies in the sandwich to keep from overloading the sandwich with a mish-mash of flavours. 

Making the curried egg sandwich 

Make a tasty curried egg sandwich filling with these handy tips:

  • To boil the eggs for the egg sandwich filling, cover the eggs with water in a saucepan, cover with the lid and bring to a boil. Once boiling, lower to medium-high heat and cook for 8 minutes. Turn off heat, transfer the eggs to a bowl of iced water to cool down before peeling. See our guide for how to boil eggs perfectly. 

  • Cool the peeled eggs completely, then mix with mayonnaise and curry powder. You don’t want a warm filling because the steam can turn the bread soggy.

  • Spread both slices of bread with butter to act as a barrier between the bread and the filling.
