Mixed seed energy balls

Ingredients

  • 1/4 cup (50g) pepitas (pumpkin seeds)
  • 1/4 cup (35g) sunflower seeds
  • 1/4 cup (35g) sesame seeds
  • 12 fresh dates, pitted
  • 2 tbs cacao powder
  • 1 cup (80g) desiccated coconut
  • 2 tbs Coles Finest Pure Canadian Maple Syrup
  • 2 tbs desiccated coconut, extra

Method

  1. Step 1

    Line a large baking tray with baking paper. Place the pepitas, sunflower seeds, sesame seeds, dates, cacao powder, coconut and maple syrup in a food processor and process until the mixture is almost smooth and combined.

  2. Step 2

    Place the extra coconut on a plate. Roll 1-tbs portions of the date mixture into 18 balls. Place each ball in the coconut on the plate and turn to coat.

  3. Step 3

    Arrange the balls on the lined tray and place in the fridge for 1 hour or until set.
