Ingredients

  • 1 lime, cut into wedges
  • 2 1/2 tbs (50ml) white rum
  • 4 mint sprigs
  • 1 tbs soda water
  • Ice cubes, to serve

  • 1 cup (220g) caster sugar

Method

  1. Step 1

    To make the simple sugar syrup, bring 1 cup (250ml) water to the boil in a small saucepan over medium heat. Add the sugar. Cook, stirring, for 1 min or until the sugar dissolves. Bring to the boil. Reduce to a simmer. Cover and cook for 5-7 mins or until the syrup thickens slightly. Remove from heat and set aside to cool completely.
  2. Step 2

    Place 1 tbs sugar syrup in a serving glass with the lime. Use a metal spoon to muddle until the lime releases its juice.
  3. Step 3

    Add the rum and 3 mint sprigs to the glass. Fill with ice. Top up with soda water and stir to combine.
  4. Step 4

    Garnish with the remaining mint sprig. Serve immediately.
