  • 1 lime, cut into small wedges
  • 1 tbs white sugar
  • 1/2 cup mint sprigs
  • 1/4 cup (60ml) white rum
  • Crushed ice, to serve
  • 1/2 cup (125ml) soda water

  1. Step 1

    Place the lime, sugar and half the mint in a bowl. Use the end of a rolling pin to crush the lime and mint to release their juices. Stir in the rum.

  2. Step 2

    Divide lime mixture between serving glasses. Add ice, soda water and the remaining mint. Serve immediately.
