Mona’s Christmas syrup


  • 2 cups (500ml) Coles Vanilla Flavoured Coffee Syrup
  • 10cm-piece ginger, peeled, coarsely chopped
  • 3 cinnamon sticks or quills
  • 2 whole star anise
  • 4 whole cloves

  1. Step 1

    Place syrup, ginger, cinnamon, star anise, cloves and 2 cups (500ml) water in a saucepan. Bring to the boil over high heat. Reduce heat to medium-low and simmer for 20 mins or until syrup thickens slightly. Set aside to cool.

  2. Step 2

    Strain syrup mixture through a fine sieve into a sterilised jar. Discard solids. Store in fridge for up to 3 weeks.
