Inspired by the abundance of flavours, this Moroccan-style beef with jewelled couscous is so tasty and so easy to make.

Moroccan-style beef with jewelled couscous

Ingredients

  • 4 (about 150g each) Coles Australian No Added Hormones Beef Rump Steaks
  • 2 tbs olive oil
  • 1 tbs Moroccan seasoning
  • 1 1/4 cups (250g) wholemeal couscous
  • 1/4 cup (40g) finely chopped pitted fresh dates
  • 1/4 cup (40g) chopped dried apricots
  • 1 1/4 cups (310ml) boiling water
  • 1/4 cup (35g) slivered almonds, toasted
  • 2 tbs lemon juice
  • 60g pkt Coles Australian Baby Rocket
  • 1/3 cup mint leaves

Method

  1. Step 1

    Heat a chargrill on medium-high. Rub steaks with half the oil and sprinkle with the Moroccan seasoning. Cook for 3-4 mins each side for medium or until cooked to your liking. Transfer to a plate and cover with foil to keep warm.
  2. Step 2

    Meanwhile, place the couscous in a heatproof bowl. Add the date and apricot and stir to combine. Stir in the boiling water. Cover with plastic wrap and set aside for 4-5 mins or until the liquid is absorbed. Use a fork to separate the grains.
  3. Step 3

    Add the almond, lemon juice and remaining oil to the couscous mixture and stir to combine. Season.
  4. Step 4

    Thickly slice steaks. Divide couscous mixture evenly among serving plates with rocket and mint. Top with steak.
