Mustard steak with corn and potato mash

Ingredients

  • 800g washed potatoes, peeled, chopped
  • 2 tbs Coles Light Sour Cream
  • 1 tsp olive oil
  • 420g can corn kernels, drained
  • 4 (about 200g each) Coles Australian No Added Hormones Beef Scotch Fillet Steaks
  • ¼ cup (70g) Coles Wholegrain Mustard
  • 2 bunches asparagus, woody ends trimmed, steamed
  • 2 tbs chopped chives

Method

  1. Step 1

    Cook potato in a saucepan of boiling water for 10 mins or until tender. Drain well. Return to the pan. Add the sour cream. Place over low heat. Use a fork or potato masher to mash for 2 mins or until smooth and fluffy. Season.
  2. Step 2

    Meanwhile, heat oil in a large frying pan over medium heat. Add corn and cook, stirring occasionally, for 5 mins or until golden and heated through.
  3. Step 3

    Stir corn into mash. Season. Wipe frying pan clean. Heat over medium-high heat. Season steak. Spread evenly with mustard. Cook for 2 mins each side for medium-rare or until cooked to your liking. Transfer to a plate. Rest for 5 mins.
  4. Step 4

    Divide the mash and asparagus among serving plates. Arrange steak over mash. Sprinkle with chives to serve.

Recipe tip

Serve with ground paprika and olive oil.
