Natalie’s mum’s seafood sauce

Ingredients

  • 1/2 cup (125ml) thickened cream
  • 1/3 cup (80g) whole-egg mayonnaise
  • 1/4 cup (60ml) tomato sauce
  • 1 tsp lemon juice
  • 1/2 tsp Worcestershire sauce

Method

  1. Step 1

    Use an electric mixer to whisk the cream in a bowl until soft peaks form. Add the mayonnaise, tomato sauce, lemon juice and Worcestershire sauce and gently fold to combine. Season. 

  2. Step 2

    Transfer to a serving bowl. Cover and place in the fridge for 30 mins to chill before serving with seafood.

Serve with chilled seafood (such as fresh oysters, smoked salmon and cooked scallops, lobster tails and whole prawns).
