Ingredients

  • 4 Coles Bakery Shortbread Fingers
  • 1/4 cup Coles Natural Almonds, toasted, coarsely chopped
  • 500g vanilla yoghurt
  • 4 nectarines, stoned, sliced into wedges
  • 3 passionfruit, pulp removed
  • Mint leaves, to garnish

Method

  1. Step 1

    Place the biscuits and almonds in a food processor and process until the mixture resembles coarse crumbs.
  2. Step 2

    Divide 1/3 of the biscuit crumb between four 1 cup (250ml) capacity serving glasses. Top with 1/3 of the yoghurt, 1/3 of the nectarine slices and 1/3 of the passionfruit pulp. Continue layering. Garnish with mint leaves.
