  • 200g plain digestive biscuits
  • 200g salted butter, melted
  • 375g can sweetened condensed milk
  • 1/3 cup (80ml) golden syrup
  • 200g dark chocolate, coarsely chopped
  • 1 tbs vegetable oil

Method

  1. Step 1

    Grease a 16cm x 26cm (base measurement) slice pan and line with baking paper, allowing the sides to overhang.

  2. Step 2

    Place biscuits in a food processor and process until finely crushed. Add 125g of the melted butter. Process until well combined. Spoon into the prepared pan and press evenly over the base. Smooth the surface and place in the fridge for 30 mins or until firm.

  3. Step 3

    Combine the condensed milk, golden syrup and remaining butter in a medium saucepan over medium-low heat. Cook, stirring constantly, for 10 mins or until mixture thickens and is dark golden. Pour over the biscuit base. Use the back of a spoon to smooth the surface. Set aside for 30 mins to cool.

  4. Step 4

    Combine the chocolate and oil in a heatproof bowl over a saucepan of simmering water. Stir until chocolate melts and mixture is smooth. Spread the mixture evenly over the caramel. Place in the fridge for 30 mins or until set. Cut into pieces.

Here are some tips for making the best no-bake caramel slice:

  • Line the baking tray with a longer sheet of baking paper, so you have something to hold onto when sliding the slice out. 

  • Go for full-fat condensed milk for the caramel filling, so that it doesn’t end up too runny.

  • When cooking the caramel, stir it constantly to prevent it from getting stuck to the bottom of the pan. 

  • After pouring the cooked caramel filling onto the biscuit base, allow it to cool at room temperature for 30 minutes before pouring the chocolate on top. This prevents the chocolate from setting too quickly when you spread it over the caramel. 

  • For cleanly cut slices, heat your knife blade under hot water and dry it before cutting up the caramel slice.

Place the slice in an airtight container in the fridge for up to 5 days. To freeze, cut it up into individual portions and freeze on a single-layer tray. Then, place the frozen slices into a freezer-safe resealable bag or airtight container and freeze for up to 3 months.
