Non-alcoholic strawberry piña colada

Beat the heat this summer with this cheeky alcohol-free pina colada recipe.

  • Prep time15 minutes, + 1 hour freezing time


  • 450g can pineapple pieces in juice
  • 400ml can Coles Coconut Cream, chilled
  • ⅓ cup (80ml) lime juice
  • 2 tbs caster sugar
  • 250g frozen sliced strawberries
  • 1 cup crushed ice
  • Pineapple wedges, to serve
  • Mint sprigs, to serve

  1. Step 1

    Line a large baking tray with baking paper. Drain the pineapple pieces, reserving the juice. Arrange pineapple pieces over the lined tray. Freeze for 1 hour or until firm.
  2. Step 2

    Place the frozen pineapple, reserved pineapple juice, coconut cream, half the lime juice and half the sugar in a blender. Blend until smooth. Transfer to a jug.
  3. Step 3

    Place strawberries, ice, remaining lime juice and remaining sugar in a clean blender and blend until smooth. Transfer to a separate jug.
  4. Step 4

    Pour strawberry mixture among serving glasses. Top with pineapple mixture. Decorate with the pineapple wedges and mint sprigs and serve immediately.
