Make this One-dish pork roast for a simple main this Easter. Featuring crispy crackling and golden potatoes, it's a delicious dish that will wow any crowd.

Ingredients

  • 2.5kg Coles Australian Pork Leg Roast Bone In
  • 2 tbs sea salt flakes
  • 2 tsp cracked black pepper
  • 6 thyme sprigs
  • 1kg Red Royale potatoes, sliced
  • 3 pears, cut into wedges
  • 8 garlic cloves, unpeeled
  • 1 cup (250ml) chicken stock
  • Coles Australian Superfood Leaf Blend, to serve
  • Thyme sprigs, extra, to serve

Method

  1. Step 1

    Preheat oven to 230°C. Pat the pork dry with paper towel.
  2. Step 2

    Combine sea salt flakes and pepper in a small bowl. Rub over the pork rind and into the cuts. Place 3 thyme sprigs and pork, rind-side up, in a roasting pan. Roast for 30 mins or until rind starts to crackle.
  3. Step 3

    Reduce oven temperature to 180°C. Roast for 1 hour. Add potato, pear, remaining thyme, garlic and stock to the roasting pan. Roast for a further 1 hour 40 mins or until pork is cooked through and potato is tender. Cover with foil and set aside for 20 mins to rest.
  4. Step 4

    Arrange potato mixture on a large serving platter. Top with pork. Serve with salad and extra thyme sprigs.
