Ingredients

  • 1 tbs olive oil
  • 500g Coles RSPCA Approved Chicken Thigh Fillets (from the deli)
  • 2 garlic cloves, crushed
  • 1 lemon, thinly sliced
  • 1/2 x 500g pkt Coles frozen Cauliflower and Broccoli mix

Method

  1. Step 1

    Preheat oven to 200°C. Heat the oil in a large ovenproof frying pan over high heat. Cook chicken for 3 mins each side or until brown all over. Add the garlic and lemon slices. Season.

  2. Step 2

    Cover and bake for 10 mins. Add vegetables to the pan and cover. Bake for a further 10 mins or until chicken is cooked through. Season.

  3. Step 3

    Divide chicken mixture among plates to serve.
