One-pan chicken and rice tikka masala


  • 4 chicken breast fillets
  • 1 cup (200g) long-grain white rice
  • 375g pkt Passage To India Tikka Masala Simmer Sauce
  • 2 cups (240g) frozen peas
  • 200g tub tzatziki dip

  1. Step 1

    Spray a large, deep frying pan with olive oil spray and place over high heat. Cook the chicken for 3 mins each side or until golden. Transfer to a plate. 

  2. Step 2

    Add the rice, simmer sauce and 1½  cups (375ml) water to the pan. Stir until well combined. Bring to a simmer. Return chicken to the pan and reduce heat to low. Cover and cook for 15 mins. Add the peas and cook, covered, for 5 mins or until the chicken is cooked through and the rice is tender. 

  3. Step 3

    Top chicken mixture with tzatziki and season with pepper to serve.
