One-pan roast lamb

Ingredients

  • 1/4 cup (60ml) olive oil
  • 2 tbs rosemary leaves
  • 2 garlic cloves, crushed
  • 2.5kg Coles Australian Lamb whole Leg Roast
  • 6 desiree potatoes, cut into 1cm slices
  • 2 fennel, quartered
  • 1 bunch Dutch carrots, trimmed, scrubbed
  • 1 garlic bulb, halved crossways
  • 1 cup (250ml) chicken stock
  • 1/4 cup (60ml) lemon juice
  • Lemon wedges, to serve
  • Steamed green beans, to serve

Method

  1. Step 1

    Preheat oven to 180°C. Grease a large baking dish with lid.
  2. Step 2

    Combine the oil, rosemary and garlic in a shallow glass or ceramic dish. Season with salt and pepper. Add lamb and turn to coat. Use fingers to rub the marinade into the lamb.
  3. Step 3

    Place potato, fennel, carrot and garlic in prepared dish. Pour over the stock and lemon juice. Top with the lamb. Cover. Bake for 1 hour 30 mins. Uncover and bake for a further 1 hour or until golden. Serve with lemon wedges and green beans.
