Do yourself a favour and give this One-pot horseradish roast beef a go. Served with crunchy rosemary potatoes, it's a simple yet impressive dinner option that's great for weekends.

One-pot horseradish roast beef with rosemary potatoes

Ingredients

  • 2 tbs horseradish cream
  • 4 garlic cloves, crushed
  • 1 tbs wholegrain mustard
  • 2 tsp freshly ground black pepper
  • 1.5kg Coles Australian Family Beef Roast
  • 800g white potatoes, thickly sliced
  • 1 tbs rosemary leaves
  • 2 tbs olive oil
  • Mixed salad leaves, to serve

Method

  1. Step 1

    Preheat oven to 220°C. Grease a large baking dish.
  2. Step 2

    Combine the horseradish cream, half the garlic, mustard and pepper in a bowl. Season with salt. Rub all over the beef to coat.
  3. Step 3

    Combine the potato, rosemary and oil in a bowl. Arrange the potato mixture in the base of the baking dish. Top with the beef. Roast for 15 mins.
  4. Step 4

    Reduce oven to 190°C. Roast for a further 1 hour for medium or until beef is cooked to your liking and potato is tender. Set aside, covered, for 15 mins to rest.
  5. Step 5

    Slice the beef and serve with potatoes and mixed salad leaves.
