Method

  1. Step 1

    Preheat oven to 190°C.

  2. Step 2

Heat the oil in a large deep frying pan or flameproof oven dish over medium heat. Add the onion and garlic. Cook, stirring, for 2-3 mins or until the onion softens. Add the mince and cook, stirring with a wooden spoon to break up lumps, for 5 mins or until the mince changes colour. Add the carrot and cook for 5 mins or until soft. Add the sause and stir to combine. Bring to the boil. Season. Remove pan from heat and transfer meat sauce to a heatproof bowl.

  3. Step 3

Spread 1/2 cup of the meat sauce over the base of the same frying pan. Place lasagna sheets in a large heatproof bowl. Pour over enough boiling water to cover. Set aside for 1-2 mins to soften. Drain.

  4. Step 4

Arrange one lasagna sheet over meat sauce, trimming to fit where necessary. Spread with half the remaining meat sauce and half the cheese sauce. Top with a second lasagna sheet. Add remaining meat sauce. Top with the third lasagna sheet and remaining cheese sauce. Sprinkle with cheese. Cover with a lid or foil and transfer to the oven.

  5. Step 5

Bake for 20 mins. Uncover and bake for a further 20 mins or until cheese melts and is golden brown. Remove from the oven and set aside for 10 mins to rest.

  6. Step 6

Serve one pan lasagna with salad. Sprinkle with oregano.

Recipe tip

COOK. STORE. SAVE.
Smart swap:
For a bacon twist, try replacing the Coles cheese sauce with Coles Carbonara Sauce.

Clever storage: Store leftovers in an airtight container in the fridge for up to 5 days. Reheat in the microwave or pop in the oven in an ovenproof dish covered with foil.

This one pot lasagna is the ultimate no-fuss dinner

Lasagna (or lasagne) is an all-time family favourite found on many dinner tables on any given day of the week. However, this iconic Italian dish can often take hours to prepare – and with an extensive ingredients list. This one pot lasagna recipe combines the rich, comforting flavours of the classic dish, but condenses it into one pot for effortless cooking.

Using a few time-saving hacks, like enlisting ready-made sauce, cooking this lasagna in one pan means the flavours can infuse and it’s a dish that’s perfect for a weeknight dinner or lazy weekends. Plus, there’s less cleanup afterwards!

Tips for assembling a one pan lasagna

As the name suggests, this recipe is cooked in a pot, so there are a few tips and tricks for ensuring the best possible results.

We recommend using fresh lasagna sheets, as they cook faster than dried lasagna sheets. Before assembling the dish, ensure the sheets are softened in boiling water for a minute or so for a soft and silky texture.

To bring the meal together, add half of the beef mince mixture to the same pot you cooked the sauce in. This reduces the need for extra cleanup and allows the flavours to continue to develop. Layer the lasagna sheets followed by more meat and cheese sauce. Repeat, finishing the assembly with shredded cheese for a golden topping. It’s best to cover the lasagna with foil to lock in the moisture for a more even result. Remove the foil for the final 20 minutes of cooking time to help brown the cheese and edges.

Serving ideas for an easy one pot lasagna

Once your lasagna is ready, let it rest for 10 minutes. This time is crucial for allowing the flavours to meld and the layers to settle for a clean slice that maintains its shape.

For a home-style meal, serve the entire pot at the centre of the dinner table with serving spoons so everyone can dig in. For a more elevated presentation, cut it into individual portions and serve on plates with your favourite sides like garlic bread and a fresh salad.
