Take your toast to the next level with this orange, mandarin and grapefruit marmalade. Sweet, delicious and made using a few simple ingredients, it will be your new go-to breakfast on weekends.

Ingredients

  • 2 oranges, unpeeled, halved
  • 4 small mandarins, unpeeled, halved
  • 1 Ruby Red grapefruit, quartered
  • 1kg white sugar

Method

  1. Step 1

    Use a serrated knife to thinly slice the orange, mandarin and grapefruit crossways, setting aside any seeds. Place in a large bowl.
  2. Step 2

    Pour over 4 cups (1L) water. Place reserved seeds in a small piece of muslin and tie with kitchen string to enclose. Place in the bowl with the orange mixture. Set aside for 12 hours or overnight to soak.
  3. Step 3

    Place the orange mixture in a deep saucepan over high heat. Bring to the boil. Reduce heat to medium and cook, covered, for 30 mins or until the rind softens. Add the sugar. Cook, stirring, for 5 mins or until sugar dissolves.
  4. Step 4

    Increase heat to medium-high. Bring to the boil. Cook, stirring occasionally, for 45 mins or until marmalade has reached setting point. (To test, place a saucer in freezer to chill. Remove marmalade from heat. Place a spoonful on the chilled saucer. Return saucer to the freezer for 1 min. Run your finger through the marmalade to test if it wrinkles and gels. If it doesn’t, return to the heat for 5 mins and repeat the test).
  5. Step 5

    Use tongs to discard the seeds. Carefully divide hot marmalade among warm sterilised jars and seal. Turn upside down for 2 mins. Turn upright. Set aside to cool completely.
