This Orange roast pork recipe makes a simple dinner that the whole family can enjoy. Featuring sweet flavours and a golden, crispy crackling, you won't be able to resist!

Ingredients

  • 3kg Coles Australian Pork Leg Roast Bone in
  • ¼ cup (30g) sea salt flakes
  • 2 tbs grated orange rind
  • 500g baby potatoes, halved
  • Olive oil spray
  • 400g broccoli, cut into florets
  • ½ mini red cabbage, thinly shredded
  • 2 oranges, segmented
  • ¼ cup (60ml) orange honey Dijon dressing

Method

  1. Step 1

    Preheat oven to 230°C. Thoroughly dry pork with paper towel.
  2. Step 2

    Combine the sea salt and orange rind in a small bowl. Rub the salt mixture over the pork and rind and into the cuts. Place the pork, rind side up, in a roasting pan and roast for 30 mins or until skin starts to crackle and crisp. Reduce oven temperature to 180°C and roast for a further 2 hours or until cooked to your liking. Remove from oven. Cover and set aside for 20 mins to rest.
  3. Step 3

    Meanwhile, line a baking tray with baking paper. Place the potato on the lined tray. Spray with oil. Roast for 10 mins. Add the broccoli to the tray and roast for a further 15 mins or until vegetables are golden and tender. Set aside for 5 mins to cool. Transfer to a bowl. Add the cabbage, orange segments and dressing and toss to combine.

    Serve pork with broccoli salad.
