Ingredients

  • 4 Coles Australian Pork Loin Chops with Garlic & Herbs
  • 1 tbs extra virgin olive oil
  • 400g can cannellini beans, rinsed, drained
  • ½ red onion, thinly sliced
  • 2 tomatoes, coarsely chopped
  • 40g baby rocket leaves
  • 2 tbs extra virgin olive oil, extra
  • ¼ cup (60ml) lemon juice
  • Lemon wedges, to serve

Method

  1. Step 1

    Heat the oil in a large frying pan over medium heat. Cook the pork for 3 mins each side or until cooked through. Transfer to a plate and cover with foil. Set aside for 5 mins to rest.
  2. Step 2

    Place the beans, onion, tomato and rocket in a large bowl. Toss to combine. Combine the extra oil and lemon juice in a jug. Drizzle over the bean mixture and stir to combine.
  3. Step 3

    Divide the pork and bean mixture among serving plates. Season. Serve with the lemon wedges.
