Pappardelle with cherry tomatoes


  • 250g Cucina Matese Egg Pappardelle
  • 1 brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 690g jar tomato passata
  • 250g cherry tomatoes, halved
  • 1 long red chilli, thinly sliced (optional)
  • 60g pkt Coles Australian Baby Rocket
  • Shaved parmesan, to serve

  1. Step 1

    Cook the pasta in a large saucepan of boiling water following packet directions or until al dente. Drain well.
  2. Step 2

    Meanwhile, heat a large non-stick frying pan over medium heat. Add onion and garlic. Cook, stirring, for 3 mins or until onion softens. Add passata. Cook for 3 mins or until heated through.
  3. Step 3

    Add pasta to passata mixture in pan with tomato and chilli, if using. Toss to combine. Divide among serving bowls. Top with rocket and parmesan. Season.
