  • 1 ripe white peach, stoned, chopped
  • 2 ripe yellow peaches, stoned, chopped
  • 2 tbs maple syrup
  • 2 tbs white chia seeds

Method

  1. Step 1

    Place the combined peach and maple syrup in a medium saucepan over medium-low heat. Cover and cook, stirring occasionally, for 10 mins or until peach is tender. Remove from heat. Use a fork to coarsely mash until almost smooth. Transfer to a heatproof bowl. Set aside for 10 mins to cool.
  2. Step 2

    Add the chia seeds and stir to combine. Spoon into a 2-cup (500ml) jar and seal. Place in the fridge for 1 hour or until the mixture thickens. Store in the fridge for up to 1 week.

    Add some herbs: Try adding woody herbs, such as rosemary and thyme, to your jams for an aromatic flavour.
