This Peach French toast recipe is made for sweet breakfast lovers. Quick to prep, nutty and creamy, it's too good to resist!

Peach French toast

Ingredients

  • ½ cup (110g) caster sugar
  • 3 peaches, cut into wedges
  • 2 Coles Australian Free Range Eggs
  • ⅓ cup (80ml) milk
  • 1 tsp vanilla extract
  • 40g butter
  • 1 Coles Bakery Pane Di Casa, ends trimmed, cut into 8 slices
  • Maple syrup, to serve
  • Chopped pistachios, to serve
  • Coles Salted Caramel Ice Cream, to serve

Method

  1. Step 1

    Combine 1/3 cup (75g) sugar and 2 tbsp water in a saucepan over low heat. Cook, stirring until sugar dissolves. Bring to the boil. Add peach and cook, stirring, for 3 mins or until peach starts to soften. Remove from heat.
  2. Step 2

    Whisk the eggs, milk, vanilla and remaining sugar in a medium bowl. Melt half the butter in large frying pan over medium heat. Dip 4 slices of bread into egg mixture for 20 seconds. Transfer to a frying pan and cook for 1 minute each side or until golden. Transfer to serving plates. Wipe the pan clean. Repeat with remaining butter and bread.
  3. Step 3

    Top 1 slice of toast with peach mixture, maple syrup and pistachios. Serve with another slice of toast and ice-cream.
