Peanut butter baked oats

Ingredients

  • 1 banana
  • ½ cup (45g) rolled oats
  • 1 tsp baking powder
  • ½ cup (125ml) milk
  • 1 tbs crunchy peanut butter
  • 1 tbs maple syrup
  • 1 tsp vanilla extract
  • 50g raspberries
  • Vanilla yoghurt, to serve
  • Mixed berries, to serve
  • Honey, to serve

Method

  1. Step 1

    Preheat oven to 200°C. Mash the banana in a large bowl. Stir in the oats, baking powder, milk, peanut butter, maple syrup, vanilla and half the raspberries. Pour into a 4-cup (1L) ovenproof dish. Bake for 30 mins or until golden brown.
  2. Step 2

    Top with yoghurt and mixed berries. Drizzle with honey to serve.
