Pear, mixed spice and cranberry strudel

Ingredients

  • 3 William Bartlett pears, cored, cut into 2cm pieces
  • 1 William Bartlett pear, extra, cored, grated
  • 1 tsp mixed spice
  • ⅓ cup (75g) caster sugar
  • ⅓ cup (45g) dried cranberries
  • ¼ cup (25g) packaged breadcrumbs
  • 1 tsp grated orange rind
  • 30g butter, chopped
  • 8 sheets fillo pastry
  • 50g butter, melted
  • Icing sugar mixture, to dust
  • Whipped cream, to serve

Method

  1. Step 1

    Preheat oven to 190°C. Line a large baking tray with baking paper.
  2. Step 2

    Combine the chopped pear, grated pear, mixed spice, caster sugar, cranberries, breadcrumbs, orange rind and chopped butter in a bowl.
  3. Step 3

    Place one fillo sheet on a clean work surface. Brush with a little melted butter. Top with another fillo sheet and brush with a little more of the melted butter. Repeat with remaining fillo sheets and melted butter. Place the pear mixture lengthways along the centre of pastry, leaving a 5cm border from the short ends. Roll to enclose and fold in the sides. Place, seam-side down, on the prepared tray. Brush with any remaining melted butter. Bake for 40 mins or until golden and heated through. Set aside for 5 mins to cool. Dust with icing sugar. Cut into slices and serve with cream.
