Pecan and pumpkin pie bliss balls

Ingredients

  • 225g butternut pumpkin
  • 150g chopped pecans
  • 1¼ cups (95g) shredded coconut
  • 2 tbs maple syrup
  • 1 tsp mixed spice
  • 2 tbs pepitas (pumpkin seeds)

Method

  1. Step 1

    Seed, peel and chop 225g butternut pumpkin. Steam until tender. Cool. Process 150g chopped pecans in a food processor until finely chopped. Reserve 1/2 cup (60g) pecan on a plate. Add pumpkin, shredded coconut, maple syrup, mixed spice and pepitas (pumpkin seeds) to remaining pecan in the food processor. Process until almost smooth and well combined.
  2. Step 2

    Roll 2-tbs portions of pumpkin mixture into balls. Roll in reserved pecan to coat. Place on a lined tray in the fridge for 1 hour or until set. Store in an airtight container in the fridge for up to 1 week.
